Sip & Savor: Wine Delights

Hilmy 2022 Albarino
Harvested later in the season, this Albariño was allowed to reach full maturity. Partial malolactic fermentation was employed to enhance its naturally elegant structure, while fermentation at 60 degrees for a week encouraged the slow development of delicate aromatic layers.

Tasting Notes: Pear, State Fair Lemonade, Creamy
Pairing Notes: Cacio e Pepe, Shrimp Alfredo, East Coast Oysters
Calais Winery 2021 Cuvée du Ruisseau
This wine presents a layered and complex profile, with aromas of freshly picked Poteet strawberries, huckleberry coulis, and baking spices, accented by fresh marjoram, dried sage, beurre noisette, dried rose hip petals, cocoa nibs, toasted hazelnuts, black tea, cedar, and limestone. It pairs beautifully with herbed tomato tart, pork loin with Calvados sauce, grilled free-range chicken with mango chutney and marinated vegetables, or leg of lamb Provençal with Herb de Provence jus and stewed tomatoes.

"How To Stop Time" By Matt Haig - Tom Hazard has returned to London to live an ordinary life as a history teacher—but he’s far from ordinary. Though he looks 41, he’s lived for centuries, rubbing shoulders with Shakespeare, Captain Cook, and Fitzgerald. On his first day, he meets a captivating French teacher, but love is forbidden by the secretive Albatross Society. As his long past and the Society’s watchful leader threaten his new life, Tom must choose between staying trapped in history or finally embracing the present. How to Stop Time is a bighearted, original novel about love, loss, and learning to truly live.
"Trust" By Hernan Diaz- Even amid the glitter of 1920s New York, everyone knows Benjamin and Helen Rask: he, a Wall Street legend; she, the daughter of eccentric aristocrats. Together they’ve climbed to the top, but at what cost? Hernan Diaz’s TRUST explores this story of wealth, privilege, and deception, weaving multiple narratives—including one woman’s quest to uncover the truth—across a century. Part immersive tale, part literary puzzle, it confronts the power of money, the distortions of memory, and the ease with which facts can be manipulated.
